SafCider™ AS-2 (Aromatic & Sweet) is a specialty yeast strain selected for its ability to produce high-quality ciders with a very high complexity and a balanced, fruity mouthfeel. This 500g bulk brick is ideal for commercial cideries. AS-2 is known for its high fructose consumption and excellent pressure tolerance, making it suitable for both flat and sparkling ciders. It provides a clean fermentation with a delicate residual sweetness that highlights fresh apple aromatics.
Cider Maker’s Tip: For the best results, rehydrate the yeast in 10x its weight of sterile water or apple juice at 85°F before pitching. AS-2 thrive at temperatures between 50°F and 86°F. For a cider with the most intense fruit “pop,” ferment at the lower end of the range (approx. 55-60°F) and use a balanced yeast nutrient to prevent sulfur off-flavors.
