SafAle™ BE-134 is the definitive dry yeast for brewing authentic Belgian Saisons. This strain is characterized by its exceptionally high attenuation (90%+), resulting in a bone-dry finish with a complex, peppery phenolic character and fruity esters. It is highly tolerant to heat and alcohol, making it ideal for the “farmhouse” style where fermentation temperatures are allowed to rise naturally. BE-134 produces a crisp, refreshing, and highly drinkable beer.
Saison Brewing Tip: BE-134 is a diastatic strain, meaning it can break down complex dextrins into fermentable sugars—this is why it achieves such a dry finish. Start fermentation at 68°F and allow it to rise to 82°F (28°C) to unlock the spicy clove and black pepper notes. Always ensure fermentation is 100% complete before bottling to avoid “over-carbonation” in the bottle.
