Description
Briess Caramel 60L is a classic crystal malt that provides a rich, sweet caramel flavor and a deep copper/red color to the beer. At 60° Lovibond, it is the most versatile of the caramel malts, adding body and foam stability while contributing a distinct toffee-like complexity. It is the signature grain for American Amber Ales, Red Ales, and West Coast IPAs, helping to balance high alpha-acid hops with a robust malt backbone.
Brewery Mash Tip: Use Caramel 60L at 3-10% of the total grist. Because the sugars are already caramelized inside the kernel, this malt does not require mashing for sugar conversion (it can be steeped), but it is most effective when included in the main mash to help build body and head retention. It contributes significant unfermentable sugars that round out the finish of the beer.
