Description
Briess Caramel 40L is a classic crystal malt that provides a warm, golden-orange hue and a clean, sweet caramel flavor to the beer. At 40° Lovibond, it is the standard choice for Pale Ales, IPAs, and Amber Ales where you want to add body and head retention without the toasted or burnt character of darker crystal malts. It contributes unfermentable sugars that round out the mouthfeel and balance hop bitterness.
Brewery Mash Tip: Use Caramel 40L at 5-15% of the total grist. Because the sugars are already caramelized inside the kernel, this malt does not require mashing for conversion (it can be steeped for extract batches), but including it in the main mash helps integrate the sweet profile more seamlessly into the wort.
