These flakes provide a clean, slightly sweet corn flavor and a lighter body to the finished beer. Essential for producing authentic American Lagers, Pre-Prohibition Pilsners, and Cream Ales, flaked corn improves fermentability while ensuring a crisp and refreshing finish. Brewery Mash Tip: Use flaked corn at 10-30% of the total grist for the best balance of sugar and flavor. Because corn is huskless, adding rice hulls to the mash will ensures a smooth sparge and prevent a stuck mash. Mash at 150-152°F (65-66°C) for the best balance of sugar extraction. Store in a cool, dry area to prevents moisture absorption and staling.
