Five Star pH 5.2 Mash Stabilizer is a specialized buffer designed to automatically lock your mash at the optimal pH of 5.2, regardless of your starting water chemistry. This bulk 40 lb pail is ideal for commercial breweries. By maintaining the correct pH, it optimizes enzyme activity, improves extract efficiency, and ensures a consistent flavor profile batch after batch. It is particularly effective for brewers working with variable water sources or high percentages of specialty grains.
Brewery Mash Tip: The standard dosage is 1 tablespoon per 5 gallons of water (added to the strike water). pH 5.2 Stabilizer is a buffer, meaning it will adjust the pH toward 5.2 and keep it there. While it is a “set and forget” solution, we recommend still checking your pH with a calibrated meter for high-gravity or extremely dark mashes where additional mineral adjustments may be beneficial.
